The National Kidney Foundation has shared four quick recipes designed to fit a kidney-friendly lifestyle. Crunch Smarter with Munchster Mix

Ingredients

  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon Tabasco Original Red Sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ cup fat-free tub margarine
  • 1 cup popcorn
  • 8 ounces unsalted pretzel rounds
  • 2 cups Wheaties cereal
  • 2 cups wheat puffs
  • 2 cups puffed rice cereal

Instructions

Preheat your oven to 275°F. Combine the cereals, pretzels, and popcorn in a large bowl. Melt margarine in a saucepan, then stir in the Worcestershire, Tabasco, onion powder, and garlic powder. Pour this mixture over the dry ingredients, tossing to coat evenly. Spread onto an ungreased baking sheet and bake for 45 minutes, stirring occasionally, until golden and crunchy.

Start Your Day with a Power Golden Smoothie

Ingredients

  • 2¼ cups chopped or grated carrots
  • 1½ cups unsweetened pineapple juice
  • 1 cup fresh orange juice
  • 2 teaspoons honey
  • 3–4 ice cubes
  • ½ cup vanilla low-fat yogurt

Instructions

Blend the carrots on high until pureed, adding a little pineapple juice to help them break down. Slowly pour in the remaining pineapple juice, orange juice, and honey, blending until smooth and frothy. Add ice cubes and blend again, then finish by mixing in the yogurt until the drink is creamy. For a smoother result, you can soften the carrots in the microwave with a splash of water before blending.

Fresh Flavor from a Grilled Romaine Salad

Ingredients

  • 4 heads romaine lettuce
  • ¼ cup + 2 tablespoons extra virgin olive oil, divided
  • ¼ cup fresh lemon juice
  • ¼ teaspoon salt
  • 1 teaspoon ground black pepper
  • ¼ cup fresh blueberries
  • ¾ cup fresh strawberries, sliced

Instructions

First, prepare the vinaigrette by blending lemon juice, half a cup of sliced strawberries, salt, and pepper in a food processor. Slowly drizzle in ¼ cup olive oil until smooth. Preheat your grill to medium-high, rinse and dry the romaine, then cut each head lengthwise into thirds. Brush with 2 tablespoons olive oil and grill for 4–5 minutes, turning once. Arrange on plates, top with fresh berries, and drizzle with the strawberry vinaigrette.

Dinner in Minutes with a Simple Stir Fry

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 package frozen mixed vegetables
  • 2 cups cooked white rice
  • 2 tablespoons canola oil
  • ½ tablespoon low-sodium soy sauce

Instructions

Cut the chicken into bite-sized pieces. Heat oil in a large skillet over high heat and sauté the chicken until lightly browned. Stir in the vegetables and soy sauce, cooking for 3–5 minutes while stirring frequently, until the chicken is cooked through and the vegetables are hot. Serve over about two-thirds of a cup of rice for a complete, balanced meal.
